The Domain
Located in Volnay, 5km from
the south of Beaune, the Domain Georges Glantenay
et Fils cultivates a vineyard of eight ha, distributed on the appellations
Volnay, Pommard and Chambolle-Musigny. This exploitation was created
during the XVIth century, and has been carried on from generation to
generation until Pierre GLANTENAY, who’s now at the head of the domain.
The idea of terroir is essential for the quality of the wine, so it has to be precised
that the clay and limestone soils of Volnay and Pommard are located at mid-hill,
exposing the vineyard to a microclimate. Therefore, the grapes draw from this
soil the elegance and delicacy of the Volnay wines, but also the robustness and
the tannins of the Pommard wines. These grapes suggest a corpus, a colour and
unique aromas.

During the period of grape
harvest (September), around twenty-five workers are employed by the domain to
cut the grapes and select the good ones (we try to reject each rotten grape).
Thus, the winemaker ensures
all the grapes are cut in the vineyards, which takes approximately ten days. |

Once cut and back to the domain, the grapes are set on a special table
where the good ones are selected again (a second selection ensures a better quality of wine), and destalked. Pulp, juice and peel are subsequently led to a vat in which they will
stay during fifteen days for fermentation and maceration (this will give its
red colour to the wine). |

Then, the filtered juice is translated from the vat to a barrel for
the ageing of the wine (approximately eighteen months). To appreciate all its promises, the wine has to be preserved in the best
conditions (10 to 15°C, no light and enough humidity). |

The bottling occurs in the domain, a few years being enough for one
bottle to return its elegance, sumptuousness and delicacy, releasing its so
particular flavours which delight the experts. |
